Ingredients

  • 8 medium Tomatillos
  • 2 medium Jalapeños
  • 2 large Garlic cloves
  • 0.5 medium White onion
  • 0.5 cup Cilantro
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 0.25 cup Water

Directions

Step 1

Husk and rinse the tomatillos thoroughly to remove the sticky residue. Cut them in half.

Heat a dry skillet over medium-high heat and add the halved tomatillos (cut side down), jalapeños, and unpeeled garlic cloves.

Step 3

Roast them for 5-7 minutes, turning occasionally, until the jalapeños and garlic are charred and the tomatillos are softened and slightly blackened.

Once cooled slightly, peel the garlic and remove the stems from the jalapeños (you can remove the seeds as well for a milder salsa).

Place the roasted tomatillos, jalapeños, and peeled garlic in a blender or food processor. Add the chopped onion, cilantro, lime juice, salt, and water.

Blend until smooth, or pulse for a chunkier consistency, depending on your preference.

Taste the salsa and adjust the seasoning with more salt or lime juice if needed.
