Ingredients

  • 4 medium-sized green bell peppers
  • 2 small jalapeño peppers
  • 1.5 cups white vinegar
  • 6 cups granulated sugar
  • 3 ounces liquid pectin
  • 4 drops green food coloring (optional)

Directions

Step 1

Wash the green bell peppers and jalapeño peppers thoroughly. Remove the stems and seeds from the green bell peppers, and slice both the bell peppers and jalapeño peppers into small pieces.

Step 2

Using a food processor, finely chop the peppers until they are almost puréed but still slightly chunky. You should have about 1 cup of processed peppers.

Step 3

In a large saucepan, combine the processed peppers and white vinegar. Bring to a boil over medium-high heat, then reduce the heat and simmer for 5 minutes.

Add the granulated sugar to the saucepan, stirring until the sugar is completely dissolved. Bring the mixture back to a boil and let it boil rapidly for 1 minute.

Stir in the liquid pectin and, if desired, add the green food coloring to enhance the jelly's color. Return the mixture to a full rolling boil and boil for 1 minute longer. Remove the saucepan from heat.

Using a spoon, skim off any foam that forms on the surface of the jelly mixture.

Carefully ladle the hot jelly mixture into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the jar rims clean with a damp cloth and seal with sterilized lids and rings.

Process the jars in a boiling water bath for 10 minutes to ensure safe preservation. Remove the jars from the water bath and let them cool completely at room temperature. You should hear the lids pop, indicating that they have sealed properly.

Once cooled, check the seals by pressing down on the center of the lids. If the lids do not bounce back, they are properly sealed. Store the jelly in a cool, dark place for up to 1 year or refrigerate once opened.
