Ingredients

  • 300 grams green peas (frozen or fresh)
  • 100 grams feta cheese, crumbled
  • 2 tablespoons fresh mint leaves, finely chopped
  • 2 pieces spring onions, finely chopped
  • 100 grams all-purpose flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 tablespoons olive oil (for frying)
  • 1 piece lemon wedges (for serving)
  • 100 grams yogurt or sour cream (optional, for serving)

Directions

Step 1

If using frozen peas, bring a medium saucepan of water to a boil. Add the frozen peas and blanch for 2-3 minutes until just tender. Drain and rinse under cold water, then set aside to cool.

Step 2

In a large mixing bowl, mash half of the peas with the back of a fork or potato masher until they form a chunky paste.

Step 3

Add the remaining whole peas to the bowl, followed by the crumbled feta cheese, chopped mint leaves, spring onions, flour, baking powder, eggs, salt, and black pepper. Mix thoroughly until well combined. The mixture should be thick and hold together when pressed; if it's too wet, add a bit more flour.

Step 4

Heat the olive oil in a large non-stick skillet over medium heat. Using a spoon, scoop roughly 2 tablespoons of the pea mixture into your hand and gently shape it into a small patty. Repeat with the remaining mixture.

Step 5

Working in batches, fry the fritters in the hot oil for 2-3 minutes per side, or until golden brown and crisp. Use a spatula to carefully transfer the cooked fritters to a plate lined with paper towels to drain excess oil.

Step 6

Serve the fritters warm with a side of lemon wedges for squeezing over the top. If desired, pair with a dollop of yogurt or sour cream for extra creaminess.
