Ingredients

  • 300 grams Pasta (spaghetti, fettuccine, or penne)
  • 100 grams Fresh spinach
  • 20 grams Fresh basil leaves
  • 2 pieces Garlic cloves
  • 2 tablespoons Olive oil
  • 40 grams Parmesan cheese, grated
  • 1 tablespoon Lemon juice
  • 120 milliliters Heavy cream (or coconut cream for a dairy-free option)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 liters Water (for boiling pasta)

Directions

Step 1

Bring 2 liters of water to a boil in a large pot. Add a teaspoon of salt, then add the pasta. Cook according to package instructions until al dente, then drain and set aside, reserving 1/2 cup of pasta water.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic cloves (minced or finely chopped) and sauté for 1-2 minutes until fragrant, being careful not to burn them.

Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let it cool slightly.

Step 4

In a blender or food processor, combine the wilted spinach, fresh basil leaves, Parmesan cheese, lemon juice, heavy cream, and a pinch of salt and black pepper. Blend until smooth. If the sauce is too thick, add a few tablespoons of the reserved pasta water to thin it out.

Return the drained pasta to the pot or a large mixing bowl. Pour the green sauce over the pasta and toss to coat evenly. If needed, use more pasta water to adjust the consistency of the sauce.
