Ingredients

  • 150 grams Fresh spinach
  • 200 grams Unsalted butter
  • 200 grams Granulated sugar
  • 3 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 120 milliliters Milk
  • 100 grams Unsalted pistachios (shelled)
  • 1 tablespoon Lemon zest
  • 150 grams Powdered sugar
  • 2 tablespoons Lemon juice

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch (23 cm) round cake pan and line the bottom with parchment paper.

Step 2

Blanch the spinach in boiling water for 1 minute, then drain and squeeze out any excess liquid. Blend the spinach into a smooth puree and set it aside.

In a large mixing bowl, cream the butter and sugar together using a hand mixer until light and fluffy, about 3-4 minutes.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and spinach puree until well combined.
