Ingredients

  • 3 cups Shredded cooked chicken
  • 28 ounces Green enchilada sauce
  • 12 pieces Corn tortillas
  • 3 cups Monterey Jack cheese, shredded
  • 0.5 cup Mexican crema or sour cream
  • 4 ounces Diced green chiles
  • 0.25 cup Fresh cilantro, chopped
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 2 pieces Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 Optional toppings: sliced avocado, diced tomatoes, jalapeños, or lime wedges

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cumin and cook for another minute, stirring frequently. Remove from heat.

Step 3

In a large mixing bowl, combine the shredded chicken, sautéed onion mixture, diced green chiles, salt, and black pepper. Stir to combine.

Step 4

Spread about 1/2 cup of green enchilada sauce evenly on the bottom of a 9x13-inch baking dish.

Step 5

Layer 4 corn tortillas on top of the sauce, overlapping slightly. Spoon 1/3 of the chicken mixture over the tortillas, followed by 1/3 of the remaining enchilada sauce and 1 cup of shredded Monterey Jack cheese.

Step 6

Repeat this layering process two more times: tortillas, chicken mixture, sauce, and cheese. Finish with a final layer of cheese on top.

Step 7

Cover the casserole dish with aluminum foil and bake for 20 minutes. Then remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden.

Step 8

Remove from the oven and let the casserole rest for 5-10 minutes before serving.

Step 9

Garnish with chopped cilantro and a drizzle of Mexican crema or sour cream. Add optional toppings like sliced avocado, diced tomatoes, jalapeños, or a squeeze of lime if desired.

Step 10

Serve warm and enjoy!
