Ingredients

  • 1 cup Basmati rice
  • 1 cup Coriander leaves (fresh)
  • 2 Green chilies
  • 2 Garlic cloves
  • 1 teaspoon Ginger
  • 1 Onion (finely chopped)
  • 1 tablespoon Lemon juice
  • 1 teaspoon Cumin seeds
  • 1 Bay leaf
  • 2 tablespoons Vegetable oil
  • 2 cups Water
  • 1 teaspoon Salt

Directions

Step 1

Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain and set aside.

Step 2

In a blender, combine coriander leaves, green chilies, garlic, ginger, and a tablespoon of water. Blend until you have a smooth paste. Set the coriander paste aside.

Step 3

Heat vegetable oil in a deep pan over medium heat. Add cumin seeds and the bay leaf, and allow them to sizzle for 30 seconds.

Add the finely chopped onion to the pan and sauté until golden brown, about 4-5 minutes.

Stir in the prepared coriander paste and cook for 2 minutes, stirring frequently to release the flavors.

Add the soaked and drained basmati rice to the pan, and gently stir to coat the rice with the spice mixture.

Pour in 2 cups of water and add salt. Stir gently, then bring the mixture to a boil.

Lower the heat to a simmer, cover the pan with a tight-fitting lid, and cook for 15 minutes, or until the rice is fully cooked and the water has been absorbed.

Remove the pan from heat and let it rest, covered, for 5 minutes. Fluff the rice with a fork and drizzle with fresh lemon juice.
