  • 2 pounds Pork shoulder (trimmed and cut into 1-inch cubes)

  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion (diced)
  • 4 cloves Garlic cloves (minced)
  • 1 teaspoon Cumin
  • 1 teaspoon Dried oregano
  • 4 cups Chicken broth
  • 1.5 cups Roasted green chilies (peeled, seeded, and chopped)
  • 2 medium Russet potatoes (peeled and diced)
  • 0.25 cup Fresh cilantro (chopped)
  • 2 tablespoons Lime juice

Directions

Step 1

Season the pork cubes with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Working in batches, sear the pork cubes until they are browned on all sides. Remove the pork and set aside.
