Ingredients

  • 4 medium Russet potatoes
  • 4 cups Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 medium Green chilies (roasted and peeled)
  • 2 large Garlic cloves
  • 1 cup Chicken or vegetable broth
  • 1 tablespoon All-purpose flour
  • 0.5 teaspoon Ground cumin
  • 0.5 cup Diced onion
  • 0.5 cup Shredded cheddar cheese
  • 2 tablespoons Chopped fresh cilantro (optional)

Directions

Step 1

Wash, peel, and cut the potatoes into thin strips (about ¼ inch thick). Soak the potato strips in cold water for 20 minutes to remove excess starch, then drain and dry them completely with paper towels.

Step 2

Heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).

Step 3

Working in batches, fry the potato strips in the hot oil for 3-4 minutes until they are light golden and slightly crisp. Remove them using a slotted spoon and let them drain on a paper towel-lined tray. Increase the oil temperature to 375°F (190°C).

Step 4

Return the partially cooked fries to the hot oil for a second fry, cooking them for an additional 2-3 minutes until they are crispy and golden brown. Drain again on paper towels and sprinkle immediately with salt and black pepper.

Step 5

To make the green chili sauce, finely chop the roasted and peeled green chilies. Mince the garlic cloves.

Step 6

In a medium saucepan over medium heat, add 1 tablespoon of vegetable oil and sauté the onion for 2-3 minutes until translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 7

Stir in the chopped green chilies and ground cumin. Sprinkle the flour over the mixture and cook, stirring constantly, for 1 minute to form a roux.

Step 8

Slowly pour in the chicken or vegetable broth while whisking to ensure the sauce is smooth. Bring the mixture to a simmer and let it cook for 5-7 minutes until thickened. Adjust seasoning with salt and pepper to taste.

Step 9

To assemble, place the crispy fries on a serving platter and pour the warm green chili sauce evenly over the top.

Step 10

Sprinkle shredded cheddar cheese over the fries, allowing it to melt slightly from the heat of the sauce. Garnish with freshly chopped cilantro if desired, and serve immediately.
