Ingredients

  • 2 pounds beef round steak
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 3 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup green chiles, roasted and chopped
  • 14.5 ounces diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Trim excess fat from the beef round steak and cut it into 4 equal portions.

Step 2

In a shallow dish or plate, combine the flour, salt, black pepper, and paprika. Dredge each piece of steak in the flour mixture, coating both sides evenly.

Step 3

Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Once hot, sear the steak pieces for 2-3 minutes on each side until browned. Work in batches if necessary and set the browned steaks aside.

Step 4

In the same skillet, add the diced onion and sauté for 4-5 minutes, or until softened. Add the minced garlic and cook for 30 seconds until fragrant.

Step 5

Stir in the roasted green chiles, diced tomatoes (with their juices), beef broth, and Worcestershire sauce. Bring the mixture to a simmer, scraping the bottom of the pan to deglaze and release browned bits.

Step 6

Return the browned steak pieces to the skillet, nestling them into the sauce. Reduce the heat to low, cover with a lid, and simmer gently for 1.5 to 2 hours, or until the steak is fork-tender. Check occasionally and stir to prevent sticking.

Step 7

Once finished, taste the sauce and adjust the seasoning with additional salt or pepper if needed.

Step 8

Garnish with chopped fresh cilantro, if desired, and serve hot. Green Chile Swiss Steak pairs well with mashed potatoes, rice, or crusty bread.
