Ingredients

  • 1 lb Ground beef (80/20 blend for best flavor)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Garlic powder
  • 4 slices Cheddar cheese, sliced
  • 2 Green chiles (Hatch, Anaheim, or poblano)
  • 8 slices Bacon
  • 4 Hamburger buns
  • 2 tbsp Butter
  • 4 tbsp Mayonnaise
  • 4 Lettuce leaves
  • 1 Tomato, sliced
  • 0.5 Red onion, thinly sliced

Directions

Step 1

Preheat your grill or stovetop grill pan to medium-high heat.

Step 2

Roast the green chiles directly on the flame (if using a gas stove) or under a broiler until the skins are charred and blistered. Transfer them to a bowl and cover tightly with plastic wrap for 5 minutes to steam. Peel off the charred skin, remove seeds, and slice into strips. Set aside.

Step 3

Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Drain on a plate lined with paper towels.

Step 4

In a large bowl, mix the ground beef with salt, black pepper, and garlic powder. Divide the mixture into 4 equal portions and shape into burger patties with a slight indentation in the center to ensure even cooking.

Step 5

Grill the burger patties for about 4-5 minutes per side, or until they reach your desired level of doneness (internal temperature of 160°F for fully cooked burgers). Add a slice of cheddar cheese on top of each patty during the last 1-2 minutes of cooking to melt.

Step 6

While the burgers are cooking, lightly butter the hamburger buns and toast them on the grill until golden brown, about 1-2 minutes.

Step 7

Assemble the burgers: spread 1 tablespoon of mayonnaise on the bottom half of each bun. Layer with lettuce, a grilled patty with melted cheese, roasted green chile strips, 2 slices of crispy bacon, a slice of tomato, and red onion. Top with the other half of the bun.

Step 8

Serve immediately with your favorite sides and condiments.
