Ingredients

  • 450 grams green beans
  • 60 grams walnuts
  • 120 grams plain Greek yogurt
  • 2 tablespoons fresh dill
  • 1 clove garlic
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Trim the ends of the green beans and rinse them under cold water.

Step 2

Fill a large pot with water, add a pinch of salt, and bring it to a boil. Add the green beans and cook them for 4-6 minutes until tender but still crisp.

Step 3

While the green beans are cooking, toast the walnuts in a dry skillet over medium heat for 2-3 minutes, stirring frequently until fragrant. Remove from heat and let them cool slightly.

Step 4

In a food processor, combine the toasted walnuts, Greek yogurt, fresh dill, garlic (peeled), olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy. Taste and adjust seasoning if necessary.

Step 5

Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process and preserve their vibrant color. Let them sit for 2 minutes, then drain well.

Step 6

In a large serving bowl, toss the green beans with the dill walnut sauce until evenly coated.

Step 7

Serve immediately as a warm side dish or chill in the refrigerator for a cold salad option.
