Ingredients

  • 450 grams fresh green beans, trimmed
  • 225 grams baby bella or cremini mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the green beans and blanch them for 3-4 minutes until bright green and slightly tender. Immediately drain and transfer them to a bowl of ice water to stop the cooking process. Drain well and set aside.

Step 2

In a large skillet over medium heat, heat the olive oil and butter until the butter is melted and begins to foam.

Step 3

Add the sliced mushrooms to the skillet and sauté for 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown.

Step 4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Add the blanched green beans to the skillet and toss to combine with the mushrooms and garlic. Cook for 2-3 minutes until the green beans are heated through.

Step 6

Stir in the lemon juice, salt, black pepper, and red pepper flakes (if using). Adjust seasoning to taste.

Step 7

Remove from heat and serve warm as a side dish. Enjoy!
