Ingredients

  • 450 grams green beans
  • 1 medium red onion
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups water
  • 2 cups ice

Directions

Step 1

Trim the ends of the green beans and rinse them thoroughly under cold water.

Step 2

Bring 4 cups of water to a boil in a large pot. Add 1/2 teaspoon of salt to the water.

Step 3

Carefully place the green beans into the boiling water and blanch them for 3-4 minutes, or until they are bright green and crisp-tender.

Step 4

While the green beans are cooking, prepare a large bowl filled with 2 cups of ice and water to create an ice bath.

Step 5

Using a slotted spoon, transfer the blanched green beans to the ice bath to stop the cooking process. Let them sit for 3 minutes, then drain and set aside.

Step 6

Peel and thinly slice the red onion into half-moons.

Step 7

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and cook for 5-7 minutes, stirring occasionally, until softened and lightly caramelized. Remove from heat and let cool slightly.

Step 8

Prepare the vinaigrette by whisking together 2 tablespoons of olive oil, red wine vinegar, Dijon mustard, honey, minced garlic clove, 1/2 teaspoon of salt, and black pepper in a small bowl until well combined.

Step 9

In a large serving bowl, combine the green beans and caramelized onions.

Step 10

Drizzle the vinaigrette over the green beans and onions, tossing gently to coat evenly.

Step 11

Taste and adjust seasoning if needed with additional salt or pepper.

Step 12

Serve immediately or refrigerate for up to 2 hours before serving for a chilled version. Enjoy!
