Ingredients

  • 2 Green apples
  • 2 medium Beets
  • 4 cups Arugula
  • 1 cup Goat cheese
  • 1 cup Walnuts
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Wash the beets thoroughly, wrap them individually in aluminum foil, and place them on a baking sheet. Roast for 35–40 minutes, or until they are tender when pierced with a fork.

Once the beets are done, let them cool for 10 minutes. Peel off their skins (they should come off easily) and slice them into thin wedges or rounds.
