Preheat the oven to 400°F (200°C).
Wash the beets thoroughly, wrap them individually in aluminum foil, and place them on a baking sheet. Roast for 35–40 minutes, or until they are tender when pierced with a fork.
Once the beets are done, let them cool for 10 minutes. Peel off their skins (they should come off easily) and slice them into thin wedges or rounds.
While the beets are roasting, core and thinly slice the green apples. You can leave the skin on for added texture and color.
