Ingredients

  • 240 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 115 grams unsalted butter
  • 200 grams granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 240 grams Greek yoghurt
  • 1 teaspoon lemon zest
  • 2 tablespoons powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 175°C (350°F) and lightly grease a 9-inch round cake pan. Line the bottom with parchment paper for easier removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, cream the butter and sugar together until light and fluffy, using an electric mixer on medium speed.

Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract and lemon zest.
