  • 4 medium Tomatoes
  • 1 small Red onion
  • 1 medium Green bell pepper
  • 0.5 cup Kalamata olives
  • 200 grams Feta cheese
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry all vegetables thoroughly under cool running water.

Step 2

Slice the cucumbers into half-moons or quarters depending on your preference, and place them in a large salad bowl.

Step 3

Cut the tomatoes into wedges or large chunks and add them to the bowl.

Step 4

Peel and thinly slice the red onion into rings or half-moons, and add them to the salad.

Step 5

Remove the seeds and core from the green bell pepper, then slice it into thin strips. Add these to the bowl.

Step 6

Add the Kalamata olives to the bowl, either whole or pitted if desired.

Step 7

Cut the feta cheese into small cubes or crumble it over the salad.

Step 8

In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.

Step 9

Pour the dressing over the salad and gently toss everything to combine, being careful not to break the feta too much.

Step 10

Serve immediately or chill in the refrigerator for 10-15 minutes if desired. Serve with warm pita bread or as a side dish.
