Ingredients

  • 4 medium zucchini
  • 150 grams feta cheese
  • 100 grams all-purpose flour
  • 60 grams breadcrumbs
  • 1 large egg
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh parsley
  • 1 small, grated onion
  • 2 cloves, minced garlic
  • 60 milliliters olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon baking powder
  • 100 grams yogurt (optional, for serving)

Directions

Step 1

Wash the zucchini thoroughly and grate them using a box grater. Place the grated zucchini in a clean towel and squeeze out as much liquid as possible. Transfer to a large mixing bowl.

Step 2

Crumble the feta cheese into the bowl with the zucchini.

Step 3

Add the all-purpose flour, breadcrumbs, egg, fresh dill, parsley, grated onion, minced garlic, baking powder, salt, and black pepper. Mix everything well until the ingredients are combined and a slightly sticky mixture forms.

Step 4

Heat the olive oil in a large skillet over medium heat.

Step 5

Using your hands or a spoon, shape the zucchini mixture into small patties (about 2 inches in diameter). If the mixture is too sticky, you can lightly dust your hands with flour to make shaping easier.

Step 6

Fry the croquettes in batches, placing them gently in the hot oil. Cook for 3-4 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan.

Step 7

Once cooked, transfer the croquettes to a plate lined with paper towels to absorb excess oil.

Step 8

Serve warm with a dollop of yogurt on the side, if desired.
