  • 12 oz Medium shell pasta
  • 1.5 cups Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 0.75 cup Kalamata olives, halved

  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Extra virgin olive oil
  • 3 tbsp Lemon juice, freshly squeezed
  • 2 cloves Garlic, minced
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the shell pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
