  • 16 oz Ravioli (cheese-filled)

  • 4 cups Spinach, fresh
  • 0.5 cup Sun-dried tomatoes, chopped

  • 2 tbsp Lemon juice, freshly squeezed
  • 1 tsp Lemon zest
  • 2 tbsp Fresh dill, chopped
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the ravioli according to the package instructions (usually 4–5 minutes). Drain and set aside, reserving 1/4 cup of pasta cooking water.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute, until fragrant but not browned.

Step 3

Add the fresh spinach to the skillet and cook for 2–3 minutes, stirring occasionally, until wilted.
