Ingredients

  • 500 grams All-purpose flour
  • 200 grams Whole-wheat flour
  • 2.5 teaspoons Active dry yeast
  • 350 ml Warm water (not exceeding 45°C/110°F)
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 2 teaspoons Salt
  • 2 tablespoons Sesame seeds (optional, for topping)

Directions

Step 1

In a small bowl, dissolve the active dry yeast and honey in the warm water. Let it sit for 5-10 minutes until foamy.

Step 2

In a large mixing bowl, combine the all-purpose flour, whole-wheat flour, and salt. Mix until evenly dispersed.

Step 3

Make a well in the center of the flour mixture and pour in the yeast mixture and olive oil. Stir with a wooden spoon until the dough begins to form.

Step 4

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Add a little more flour if the dough is too sticky.

Step 5

Place the kneaded dough into a lightly oiled bowl, cover with a damp kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 6

Once risen, punch down the dough to release air. Shape it into a round loaf or divide into smaller rolls, depending on your preference.

Step 7

Place the shaped dough on a baking sheet lined with parchment paper. For added texture, lightly dampen the top with water and sprinkle with sesame seeds if desired.

Step 8

Cover loosely with plastic wrap or a kitchen towel and let it rise again at room temperature for about 30 minutes.

Step 9

Preheat the oven to 200°C (390°F). Place a small pan of water on the lowest rack to create steam for a crisp crust.

Step 10

Bake the bread in the preheated oven for about 35-40 minutes, or until golden brown and it sounds hollow when tapped on the bottom.

Step 11

Allow the bread to cool on a wire rack for at least 20 minutes before slicing and serving.
