Ingredients

  • 2 large Cucumber
  • 15 Cherry tomatoes
  • 15 Kalamata olives
  • 100 grams Feta cheese
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 15 Toothpicks

Directions

Step 1

Wash and dry the cucumbers thoroughly. Using a sharp knife, slice each cucumber into 1/2-inch thick rounds. You should end up with approximately 15 slices per cucumber.

Step 2

Pat the cucumber slices dry with a paper towel and arrange them on a serving platter.

Step 3

Slice each cherry tomato in half and set aside.

Step 4

Cut the Kalamata olives in half lengthwise and remove the pits if they are not already pitted.

Step 5

Cut the feta cheese into small cubes, approximately 1/2-inch in size, ensuring you have one cube per cucumber slice.

Step 6

In a small bowl, mix the olive oil, dried oregano, salt, and black pepper. Set aside to use as a dressing.

Step 7

To assemble, place one cube of feta cheese on each cucumber slice. Follow by placing half of a cherry tomato and half an olive on top of the feta cube.

Step 8

Secure each stack with a toothpick to hold everything together.

Step 9

Drizzle the olive oil mixture over the assembled Greek Salad Bites, ensuring each one is lightly coated with the dressing.

Step 10

Serve immediately or store in the fridge for up to 2 hours before serving to keep them fresh.
