  • 350 grams penne pasta
  • 2 pieces boneless, skinless chicken breasts

  • 0.5 cup Kalamata olives, pitted and sliced
  • 0.75 cup crumbled feta cheese
  • 1 teaspoon dried oregano
  • 2 cups fresh spinach, roughly chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 liters water

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add 1 teaspoon of salt and the penne pasta. Cook according to the package instructions until al dente, about 10-12 minutes. Drain and set aside.

While the pasta is cooking, pat the chicken breasts dry with paper towels and season both sides with salt, pepper, and 0.5 teaspoon of dried oregano.
