Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups cherry tomatoes, halved

  • 12 ounces penne or spaghetti pasta
  • 0.75 cup feta cheese, crumbled
  • 0.5 cup kalamata olives, pitted and sliced
  • 0.25 cup fresh parsley, chopped
  • 2 cups baby spinach
  • 1 lemon, juiced

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining the pasta.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Add the shrimp to the skillet, season with salt and black pepper, and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
