Ingredients

  • 400 g Penne pasta (or pasta of your choice)
  • 3 tbsp Extra virgin olive oil
  • 3 cloves Garlic, minced
  • 2 cups Cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 2 cups Baby spinach
  • 1 cup Crumbled feta cheese
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Lemon juice
  • 1 tsp Lemon zest

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Stir in the cherry tomatoes and cook for 5-7 minutes, stirring occasionally, until they soften and release some juices.

Step 5

Add the Kalamata olives, dried oregano, salt, and black pepper to the skillet. Stir to combine.

Step 6

Toss in the baby spinach and stir until wilted, about 1-2 minutes.

Step 7

Add the cooked pasta to the skillet and toss to combine. If the mixture seems dry, stir in a splash of the reserved pasta water.

Step 8

Remove the skillet from heat and stir in the lemon juice and lemon zest.

Plate the pasta and sprinkle generously with crumbled feta cheese and fresh parsley.
