Ingredients

  • 1.5 cups Orzo pasta
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 0.5 cup Kalamata olives
  • 0.75 cup Feta cheese
  • 0.25 cup Fresh parsley
  • 0.25 cup Extra virgin olive oil
  • 3 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Bring a pot of salted water to a boil. Add the orzo pasta and cook for 8–10 minutes or until al dente. Drain and rinse with cold water to stop the cooking process, then transfer to a large mixing bowl.

Step 2

While the pasta is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and roughly chop the olives. Set aside.

Crumble the feta cheese and finely chop the parsley. Add these to the mixing bowl with the cooked pasta.
