Ingredients

  • 1.5 cups Orzo pasta
  • 2 cups Cherry tomatoes
  • 1 large Cucumber
  • 0.5 medium Red onion
  • 0.75 cup Kalamata olives
  • 1 cup Feta cheese
  • 0.25 cup Fresh parsley
  • 2 tablespoons Fresh dill
  • 0.25 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 2 tablespoons Lemon juice
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Bring a pot of salted water to a boil and cook the orzo pasta according to package instructions until al dente, about 8-10 minutes.

Step 2

Meanwhile, prepare the vegetables: halve or quarter the cherry tomatoes, dice the cucumber, thinly slice the red onion, and slice the Kalamata olives if they are whole.

Step 3

Finely chop the parsley and dill, and set them aside.

Step 4

Once the orzo is cooked, drain it in a colander and rinse it under cold water to cool it down and remove excess starch. Shake off the excess water and transfer the orzo to a large mixing bowl.

Step 5

Add the cherry tomatoes, cucumber, red onion, olives, feta cheese, parsley, and dill to the orzo.

Step 6

In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and black pepper to make the dressing.

Step 7

Pour the dressing over the orzo salad and toss everything together to combine thoroughly.

Step 8

Taste and adjust seasoning as needed, adding more salt, pepper, or lemon juice as desired.

Step 9

Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.

Step 10

Serve chilled or at room temperature, garnished with additional parsley or dill if desired.
