Ingredients

  • 500 g fresh green beans, trimmed
  • 60 ml olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 4 medium ripe tomatoes, grated or finely chopped
  • 1 tbsp tomato paste
  • 240 ml water
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp sugar
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook until softened and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the grated or chopped tomatoes and cook for 5 minutes, stirring occasionally, until the liquid has reduced slightly.

Step 5

Stir in the tomato paste, water, dried oregano, dried thyme, sugar, salt, and ground black pepper.

Step 6

Bring the mixture to a simmer, then add the green beans to the pot and mix well to coat them in the sauce.

Step 7

Reduce the heat to low, cover the pot, and simmer for 40–45 minutes, stirring occasionally to prevent sticking. Cook until the green beans are tender and the sauce has thickened.

Step 8

Taste and adjust the seasonings as needed.

Step 9

Serve warm, sprinkled with fresh parsley if desired. Enjoy as a side dish or a light vegetarian main course with crusty bread.
