Ingredients

  • 2 medium Russet potatoes (peeled and cubed)
  • 6 large Garlic cloves
  • 180 milliliters Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 tablespoon White wine vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 liter Water (for boiling potatoes)

Directions

Step 1

Peel and cube the russet potatoes into even-sized chunks to ensure even cooking.

Step 2

In a large pot, add the cubed potatoes and cover them with 1 liter of water. Add a pinch of salt and bring the water to a boil over medium-high heat.

Step 3

Cook the potatoes for about 15-20 minutes or until they are fork-tender. Drain the potatoes and let them cool slightly.

Step 4

While the potatoes are cooking, peel and finely mince the garlic cloves. You can also use a garlic press for a smoother texture.

Step 5

In a large mixing bowl, mash the cooked potatoes while they're still warm. You can use a potato masher or a ricer for a smoother consistency.

Step 6

Gradually stir in the minced garlic, olive oil, lemon juice, and white wine vinegar, alternating the liquid ingredients as you mix. This helps the potatoes absorb the flavors evenly.

Step 7

Add the salt and ground black pepper, and mix everything until the sauce reaches a smooth, creamy consistency. Adjust the seasoning and add more lemon juice or vinegar to taste, if needed.

Step 8

Let the skorthalia rest at room temperature for about 10 minutes to allow the flavors to meld together.

Step 9

Serve as a dip or side dish alongside grilled fish, roasted vegetables, or warm bread. Enjoy!
