Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons kalamata olives, finely chopped
  • 1 teaspoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • 0.5 teaspoons garlic powder
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 teaspoons paprika (for garnish)
  • 6 fresh dill sprigs (for garnish)

Directions

Step 1

Place the eggs in a single layer in a saucepan and cover them with cold water, ensuring the water is about 1 inch above the eggs.

Step 2

Bring the water to a boil over medium-high heat, then reduce the heat to low and let the eggs simmer gently for 10 minutes.

Step 3

Once cooked, transfer the eggs to a bowl of ice water to cool for at least 5 minutes.

Step 4

Peel the eggs carefully and slice them in half lengthwise. Remove the yolks and place them in a medium-sized mixing bowl. Arrange the egg whites on a serving platter.

Step 5

Using a fork, mash the yolks into a fine crumble. Add mayonnaise, crumbled feta cheese, chopped olives, chopped dill, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and well combined.

Step 6

Spoon or pipe the yolk mixture evenly into the hollowed egg whites using a piping bag or a zip-top bag with one corner snipped off.

Step 7

Sprinkle a pinch of paprika over the filled eggs for garnish and top each egg with a small sprig of fresh dill.

Step 8

Serve immediately or refrigerate for up to 2 hours before serving for the best flavor.
