Ingredients

  • 400 g spaghetti
  • 12 whole garlic cloves
  • 6 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 3 tbsp fresh parsley
  • 2 tbsp fresh dill
  • 1 tsp lemon zest
  • 150 g feta cheese
  • 0.5 tsp crushed red chili flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to the package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

While the pasta cooks, peel and finely mince 6 garlic cloves. Leave the remaining 6 garlic cloves whole.

In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the whole garlic cloves and cook for 5-7 minutes, stirring often, until golden brown and fragrant. Remove the roasted garlic and set aside.
