Ingredients

  • 2.25 teaspoons Active dry yeast
  • 0.5 cups Warm water
  • 0.5 cups Whole milk
  • 4 tablespoons Unsalted butter
  • 3 tablespoons Granulated sugar
  • 2 tablespoons Honey
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground cloves
  • 1 tablespoon Orange zest
  • 4.5 cups All-purpose flour
  • 2 large Eggs
  • 0.5 cups Raisins (optional)
  • 0.5 cups Chopped walnuts (optional)
  • 1 large Egg yolk
  • 1 tablespoon Water

Directions

Step 1

In a small bowl, dissolve the active dry yeast in the warm water. Let it sit for 5-10 minutes until frothy.

Step 2

In a small saucepan, heat the milk, butter, sugar, honey, salt, cinnamon, nutmeg, cloves, and orange zest over low heat until the butter melts. Allow the mixture to cool to lukewarm.

Step 3

In a large mixing bowl, combine the yeast mixture and the lukewarm milk mixture. Add 2 eggs and whisk to combine.

Step 4

Gradually add the flour, one cup at a time, mixing well after each addition. When the dough comes together, transfer it to a lightly floured surface and knead for 8-10 minutes, until soft and elastic.

Step 5

If using raisins and walnuts, knead them into the dough during the final minute of kneading.

Step 6

Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1.5-2 hours, or until doubled in size.

Step 7

Punch down the dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper. Optionally, make a cross-shaped design on top of the loaf using extra dough or a knife.

Step 8

Cover the loaf loosely with a damp cloth and let it rise for an additional 30-45 minutes, until slightly puffy.

Step 9

Preheat your oven to 350°F (175°C).

Step 10

In a small bowl, whisk together the egg yolk and 1 tablespoon of water to make an egg wash. Brush this over the surface of the dough.

Step 11

Bake the bread in the preheated oven for 35-40 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.

Step 12

Allow the bread to cool completely on a wire rack before serving.
