Ingredients

  • 4 medium potatoes
  • 4 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 4 large ripe tomatoes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 4 large eggs
  • 2 tablespoons parsley
  • 50 grams grated feta cheese

Directions

Step 1

Peel the potatoes and cut them into thick chips (around 1/3-inch thickness).

Step 2

In a large frying pan, heat 2 tablespoons of olive oil over medium heat.

Step 3

Add the potatoes to the pan in a single layer and fry them, turning occasionally, until golden brown and crisp (about 15 minutes). Remove and set aside on paper towels to drain excess oil.

Step 4

Chop the onion finely and mince the garlic cloves.

Step 5

In the same pan, add the remaining 2 tablespoons of olive oil and sauté the onion until soft and translucent (3-4 minutes). Add the minced garlic and sauté for another minute.

Step 6

Grate the tomatoes or blend them to create a smooth puree. Add the tomato puree to the pan with the onion and garlic.

Step 7

Season the sauce with salt, black pepper, and dried oregano. Stir well and cook over medium heat until the sauce thickens slightly (8-10 minutes).

Step 8

Create four small wells in the tomato sauce with the back of a spoon. Crack an egg into each well carefully.

Step 9

Cover the pan with a lid and cook on low heat until the eggs are just set to your preference (about 5-7 minutes).

Step 10

Meanwhile, finely chop the parsley.

Step 11

To assemble the dish, place the fried chips on a serving platter. Spoon the tomato sauce and eggs over the chips.

Step 12

Garnish with freshly chopped parsley and crumbled feta cheese.

Step 13

Serve immediately and enjoy your Greek Chips with Egg and Tomato!
