Ingredients

  • 450 g asparagus spears
  • 250 g cherry tomatoes
  • 1 medium cucumber
  • 1 small red onion
  • 100 g kalamata olives
  • 100 g feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 clove garlic
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of water to a boil and prepare a bowl of ice water for blanching the asparagus.

Trim and discard the woody ends of the asparagus spears. Cut the remaining asparagus into 2-inch pieces.

Once the water is boiling, add a pinch of salt and blanch the asparagus pieces for 2-3 minutes until bright green and tender-crisp.
