Ingredients

  • 12 large white mushrooms
  • 2 tablespoons olive oil
  • 2 cups baby spinach
  • 2 garlic cloves, minced
  • 1 cup crumbled feta cheese
  • 0.3333 cup kalamata olives, chopped
  • 0.25 cup plain breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms gently with a damp paper towel and remove the stems. Set the mushroom caps aside and finely chop the stems.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushroom stems, minced garlic, and baby spinach. Cook for 3-4 minutes, stirring, until the spinach wilts and the mushroom stems soften. Remove from heat.
