Ingredients

  • 1.5 lbs Ground lamb (or beef, if preferred)
  • 0.5 cups Breadcrumbs
  • 1 large Egg
  • 0.5 cups Onion, finely diced
  • 2 cloves Garlic cloves, minced
  • 1 tbsp Dried oregano
  • 1 tsp Ground cumin
  • 0.5 tsp Ground coriander
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped
  • 1 cup Plain Greek yogurt
  • 0.25 cup Cucumber, finely grated
  • 1 tbsp Lemon juice
  • 1 tbsp Dill, chopped
  • 1 tbsp Olive oil
  • 6 pieces Pita bread
  • 2 medium Tomatoes, sliced
  • 0.5 cups Red onion, thinly sliced
  • 2 cups Lettuce, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a loaf pan lightly with olive oil.

Step 2

In a large mixing bowl, combine the ground lamb, breadcrumbs, egg, diced onion, minced garlic, oregano, ground cumin, ground coriander, salt, pepper, and chopped parsley. Mix well until the ingredients are fully incorporated.

Step 3

Transfer the meat mixture into the prepared loaf pan, pressing it down firmly and evenly. Bake in the preheated oven for 45-50 minutes or until the internal temperature reaches 160°F (71°C).

Step 4

While the meatloaf is baking, prepare the tzatziki sauce. In a small bowl, combine the Greek yogurt, grated cucumber (squeeze out excess water), lemon juice, chopped dill, and olive oil. Stir until smooth and set aside in the refrigerator.

Step 5

Once the meatloaf is done, remove it from the oven and let it rest for 10 minutes before slicing it into thin strips.

Step 6

Warm the pita bread in a dry skillet or in the oven for a few minutes until soft and pliable.

Step 7

To assemble the gyros, layer several slices of meatloaf onto each pita. Top with sliced tomatoes, red onion, lettuce, and a generous dollop of tzatziki sauce.

Step 8

Fold the pita around the fillings and serve warm. Enjoy your Grecian Meatloaf Gyros!
