Ingredients

  • 1 cup Rolled oats
  • 0.5 cup Peanut butter
  • 0.25 cup Honey
  • 0.5 cup Mini chocolate chips
  • 0.5 cup Dried cranberries
  • 0.5 cup Chopped nuts (almonds, walnuts, or peanuts)
  • 0.25 cup Sunflower seeds
  • 2 tablespoons Ground flaxseed
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

In a large mixing bowl, combine the rolled oats, mini chocolate chips, dried cranberries, chopped nuts, sunflower seeds, and ground flaxseed. Stir until evenly combined.

Step 2

In a microwave-safe bowl, add the peanut butter and honey. Microwave for 20-30 seconds, just until the mixture is warm and easier to stir.

Step 3

Add the vanilla extract and salt to the peanut butter and honey mixture. Stir to combine.

Step 4

Pour the wet mixture over the dry ingredients in the large mixing bowl. Use a wooden spoon or spatula to mix until all ingredients are well incorporated and sticky.

Step 5

Using your hands, take a small handful (about 2 tablespoons) of the mixture and roll it into a ball. Repeat with the remaining mixture to make approximately 12 Gorpies.

Step 6

Place the Gorpies on a parchment-lined baking sheet or plate. Refrigerate for at least 30 minutes to set.

Step 7

Once firm, transfer the Gorpies to an airtight container or resealable bag. Store in the refrigerator for up to 1 week or in the freezer for up to 1 month.
