Ingredients

  • 4 slices Sourdough bread
  • 2 tablespoons Olive oil
  • 1 clove Garlic
  • 2 cups Romaine lettuce
  • 0.5 cup Parmesan cheese
  • 2 pieces Anchovy fillets
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Black pepper
  • 1 cup Grilled chicken breast (optional)
  • 0.5 cup Croutons

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the sourdough bread slices on a baking sheet and brush both sides with 1 tablespoon of olive oil.

Step 3

Toast the bread in the oven for 8-10 minutes, flipping halfway, until golden and crisp.

Step 4

While the bread toasts, finely mince the garlic clove and chop the romaine lettuce into bite-sized pieces.

Step 5

In a small mixing bowl, mash the anchovy fillets with a fork until they form a paste.

Step 6

Add the mayonnaise, lemon juice, Dijon mustard, and black pepper to the bowl with the anchovy paste. Mix well to create the Caesar dressing.

Step 7

Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Toss in the romaine lettuce and cook for 1-2 minutes until slightly wilted. Remove from heat.

Step 8

Optional: If using grilled chicken, chop it into small pieces and add to the skillet with the wilted lettuce to warm through.

Step 9

Spread a thin layer of Caesar dressing onto each slice of toasted sourdough bread.

Step 10

Top each toast with the warm romaine lettuce (and chicken, if using).

Step 11

Sprinkle generously with Parmesan cheese and croutons.

Step 12

Serve immediately and enjoy your Great Caesar's Toast!
