Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 4 large garlic cloves
  • 2 pounds ground beef
  • 1 medium red bell pepper
  • 1 medium jalapeño
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans
  • 15 ounces canned black beans
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 0.25 teaspoons cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon brown sugar
  • 0.25 cup fresh cilantro
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 bag tortilla chips

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Dice the onion and garlic cloves. Add them to the pot and sauté for about 5 minutes until softened and fragrant.

Step 3

Add the ground beef to the pot and cook for 7–10 minutes, breaking it apart with a wooden spoon, until browned.

Step 4

Dice the red bell pepper and the jalapeño, removing seeds for a milder chili, and add them to the pot. Stir and cook for another 5 minutes.

Step 5

Add the diced tomatoes, tomato sauce, drained kidney beans, drained black beans, and beef broth. Stir to combine.

Step 6

Stir in the chili powder, ground cumin, paprika, dried oregano, cayenne pepper, salt, black pepper, and brown sugar. Mix well.

Step 7

Reduce the heat to low and let the chili simmer uncovered for 60 minutes, stirring occasionally, until the flavors meld and the liquid reduces slightly.

Step 8

Taste and adjust seasonings as needed. If desired, add a bit more salt, cayenne pepper, or chili powder for additional heat.

Step 9

Finely chop the cilantro and stir into the chili right before serving.

Step 10

Ladle the chili into bowls and garnish with sour cream, shredded cheddar cheese, and a side of tortilla chips for dipping.
