Ingredients

  • 2 whole grapefruit
  • 2 whole avocados
  • 4 cups mixed greens
  • 0.25 whole red onion
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 whole lime
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup optional chopped nuts (pecans or almonds)

Directions

Step 1

Cut off the top and bottom of each grapefruit. Using a sharp knife, carefully remove the peel and white pith, exposing the flesh. Hold the grapefruit over a bowl to catch the juice and slice into segments by cutting between the membranes. Set the juice aside for the dressing.

Step 2

Slice the avocados in half, remove the pits, and gently scoop the flesh out with a spoon. Slice the avocado into thin wedges.

Step 3

Thinly slice the red onion and soak it in cold water for 5 minutes to reduce its sharpness. Drain and pat dry.

Step 4

In a small bowl, prepare the citrus vinaigrette. Combine 3 tablespoons of the reserved grapefruit juice, olive oil, honey, Dijon mustard, juice of 1 lime, salt, and black pepper. Whisk until emulsified.

Step 5

In a large salad bowl, layer the mixed greens, grapefruit segments, avocado slices, and red onion. If using, scatter the chopped nuts on top for added crunch.

Step 6

Drizzle the salad with the prepared dressing and toss gently to combine. Serve immediately and enjoy!
