Ingredients

  • 1000 grams Fresh grapes (red or black)
  • 200 grams Granulated sugar
  • 2 tablespoons Lemon juice
  • 120 milliliters Water

Directions

Step 1

Wash the grapes thoroughly under cold running water and remove any stems or damaged fruit.

Step 2

Place the grapes and water in a large saucepan over medium heat. Simmer for 15-20 minutes, stirring occasionally, until the grapes burst and release their juices.

Step 3

Remove the saucepan from heat and pass the grape mixture through a fine mesh sieve or cheesecloth into a bowl, pressing down with the back of a spoon to extract as much liquid as possible. Discard the solids left behind.

Step 4

Return the strained grape juice to the saucepan and set it over medium heat.

Step 5

Add the sugar and lemon juice to the saucepan, stirring until the sugar is fully dissolved.

Step 6

Reduce the heat to low and let the mixture simmer, stirring occasionally, for 45-60 minutes or until it thickens to a paste-like consistency. The mixture should coat the back of a spoon.

Step 7

Remove the grape paste from the heat and let it cool slightly.

Step 8

Transfer the paste into sterilized jars or an airtight container. Allow it to cool completely before sealing and refrigerating.

Step 9

The grape paste can be stored in the refrigerator for up to 2-3 weeks. Serve with bread, cheese, or crackers.
