Ingredients

  • 2 cups Grape-Nuts cereal
  • 1 cup Old-fashioned rolled oats
  • 0.5 cup Honey
  • 0.5 cup Peanut butter (unsweetened and creamy)
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped dried cranberries
  • 0.5 cup Chopped almonds (or nuts of your choice)
  • 0.5 teaspoon Cinnamon
  • 0.25 teaspoon Salt

Directions

Step 1

Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

Step 2

In a large mixing bowl, combine the Grape-Nuts cereal, rolled oats, chopped dried cranberries, chopped almonds, cinnamon, and salt. Stir until evenly mixed.

Step 3

In a small microwave-safe bowl, add the peanut butter and honey. Microwave in 15-second intervals, stirring each time, until the mixture is warm and pourable (but not hot). This should take about 30-45 seconds.

Step 4

Stir the vanilla extract into the peanut butter and honey mixture.

Step 5

Pour the wet ingredients over the dry ingredients in the mixing bowl. Use a wooden spoon or spatula to mix until everything is evenly coated and the mixture is sticky.

Step 6

Transfer the mixture to the lined baking pan. Use the back of a spatula or your hands (lightly greased to prevent sticking) to press the mixture firmly and evenly into the pan.

Step 7

Place the baking pan in the refrigerator and let it chill for at least 1 hour, or until the mixture has set and is firm to the touch.

Step 8

Using the parchment paper overhang, lift the set mixture out of the pan. Place it on a cutting board and cut into 10 evenly-sized bars.

Step 9

Store the bars in an airtight container in the refrigerator for up to 1 week, or freeze for longer storage.
