Ingredients

  • 3 cups Rolled oats
  • 1 cup Chopped nuts (almonds, walnuts, or pecans)

  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Honey or maple syrup
  • 0.25 cup Coconut oil or olive oil
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Dried fruit (raisins, cranberries, or apricots)
  • 0.25 cup Chopped dark chocolate (optional)

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper or a silicone mat.

Step 2

In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, ground cinnamon, and salt. Stir until well mixed.

In a small saucepan over low heat, melt the coconut oil. Add the honey or maple syrup and vanilla extract, stirring until combined and smooth. Remove from heat.
