Ingredients

  • 3 cups rolled oats
  • 1 cup almonds
  • 1 cup walnuts
  • 0.5 cup pumpkin seeds
  • 0.5 cup dried cranberries
  • 0.5 cup raisins
  • 0.333 cup honey
  • 0.25 cup maple syrup
  • 0.25 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Directions

Step 1

Preheat the oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine rolled oats, almonds, walnuts, pumpkin seeds, ground cinnamon, and salt. Stir well to distribute the spices evenly.

Step 3

In a small saucepan over low heat, combine honey, maple syrup, coconut oil, and vanilla extract. Stir until the mixture is melted and smooth.

Step 4

Pour the wet ingredients over the dry ingredients in the bowl. Mix thoroughly until all the oats and nuts are coated with the syrup mixture.

Step 5

Spread the granola mixture evenly onto the prepared baking sheet, pressing it down lightly with the back of a spoon or spatula.

Step 6

Bake in the preheated oven for 25-30 minutes, stirring halfway through for even toasting. Keep an eye on it during the last few minutes to prevent burning.

Step 7

Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up as it cools.

Step 8

Once cooled, stir in the dried cranberries and raisins.

Step 9

Store the granola in an airtight container at room temperature for up to 2 weeks. Serve with yogurt, milk, or enjoy as a snack on its own.
