Ingredients

  • 2 cups rolled oats
  • 0.5 cup sliced almonds
  • 0.25 cup pumpkin seeds
  • 0.25 cup shredded unsweetened coconut
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup honey
  • 0.25 cup coconut oil
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped dried cranberries

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large bowl, combine the rolled oats, sliced almonds, pumpkin seeds, shredded coconut, chia seeds, ground cinnamon, and salt. Stir to mix evenly.

Step 3

In a small saucepan over low heat, combine the honey and coconut oil. Stir until melted and well combined. Remove from heat and stir in the vanilla extract.

Step 4

Pour the honey mixture over the dry ingredients and mix thoroughly until all ingredients are evenly coated.

Step 5

Using a tablespoon or small ice cream scoop, scoop out portions of the mixture and press tightly into small round shapes. Place them spaced slightly apart on the prepared baking sheet.

Step 6

Bake for 20-25 minutes, or until the edges of the Granola Gems are golden brown. Keep a close eye to prevent burning.

Step 7

Remove from the oven and sprinkle the chopped dried cranberries over the freshly baked gems, pressing gently so they stick as they cool.

Step 8

Let the Granola Gems cool completely on the baking sheet, allowing them to firm up.

Step 9

Store in an airtight container at room temperature for up to one week or in the fridge for extended freshness.
