Ingredients

  • 3 cups rolled oats
  • 1 cup raw almonds, chopped
  • 1 cup raw pecans, chopped
  • 0.5 cup pumpkin seeds (pepitas)
  • 0.5 cup sunflower seeds
  • 0.5 cup shredded unsweetened coconut
  • 0.5 cup dried cranberries
  • 0.5 cup dried apricots, chopped
  • 0.5 cup maple syrup
  • 0.25 cup coconut oil, melted
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, pecans, pumpkin seeds, sunflower seeds, and shredded coconut. Stir until evenly mixed.

Step 3

In a small saucepan over low heat, combine the maple syrup, melted coconut oil, and vanilla extract. Warm the mixture for 2-3 minutes, stirring occasionally, until well combined.

Step 4

Pour the warm syrup mixture over the dry ingredients in the bowl. Add the ground cinnamon and salt. Mix thoroughly until all the ingredients are coated.

Step 5

Spread the granola mixture evenly onto the prepared baking sheet, pressing it down lightly with the back of a spoon or spatula to create an even layer.

Step 6

Bake in the preheated oven for 20-25 minutes, stirring once halfway through to ensure even toasting. Keep an eye on it during the last few minutes to prevent burning.

Step 7

Remove the granola from the oven and let it cool completely on the baking sheet. As it cools, it will become crisp and crunchy.

Step 8

Once cool, stir in the dried cranberries and chopped dried apricots.

Step 9

Transfer the granola to an airtight container and store it at room temperature for up to 2 weeks. Enjoy it with milk, yogurt, or as a snack on its own!
