Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup granola
  • 1 teaspoon baking powder
  • 0.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons salt
  • 0.75 cups brown sugar
  • 1.5 cups carrots, grated
  • 2 large eggs
  • 0.5 cups plain Greek yogurt
  • 0.25 cups vegetable oil
  • 1 teaspoon vanilla extract
  • 0.5 cups raisins (optional)
  • 0.25 cups chopped nuts, such as walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large bowl, combine the flour, granola, baking powder, baking soda, cinnamon, and salt. Stir until well mixed.

Step 3

In a separate bowl, whisk together the brown sugar, grated carrots, eggs, Greek yogurt, vegetable oil, and vanilla extract until smooth and fully combined.

Step 4

Gradually fold the wet ingredients into the dry ingredients using a spatula. Mix just until combined – do not overmix.

Step 5

If using raisins or chopped nuts, gently fold them into the batter.

Step 6

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Step 8

Remove the bread from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Step 9

Serve warm or at room temperature. Enjoy with a pat of butter or your favorite spread!
