Ingredients

  • 2 cups Rolled oats
  • 0.5 cup Chopped almonds (or nuts of choice)
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Dried cranberries (or any dried fruit of choice)
  • 0.5 cup Honey
  • 2 tablespoons Brown sugar
  • 3 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.

Step 2

Spread the rolled oats, chopped almonds, and shredded coconut evenly on a baking sheet. Toast them in the preheated oven for 8-10 minutes, stirring once halfway through, until they are lightly golden and fragrant. Remove from the oven and allow them to cool slightly.

Step 3

In a small saucepan over medium-low heat, combine the honey, brown sugar, and unsalted butter. Stir until the mixture is smooth and the sugar has dissolved completely, about 2-3 minutes.

Step 4

Remove the saucepan from the heat and stir in the vanilla extract and salt.

Step 5

In a large mixing bowl, combine the toasted oat mixture with dried cranberries (or chosen dried fruits). Pour the warm honey mixture over the dry ingredients and mix thoroughly to combine.

Step 6

If desired, fold in mini chocolate chips once the mixture has cooled slightly (to prevent them from melting).

Step 7

Transfer the mixture to the prepared baking pan. Use a spatula or the back of a spoon to press the mixture firmly and evenly into the pan. Pressing tightly helps the bars hold together after cutting.

Step 8

Refrigerate the pan for at least 1-2 hours, or until the mixture is completely set and firm.

Step 9

Using the parchment paper overhang, remove the granola block from the pan and slice it into 12 bars with a sharp knife.

Step 10

Store the granola bars in an airtight container at room temperature for up to one week or in the refrigerator for up to two weeks. For longer storage, wrap them individually and freeze for up to three months.
