Ingredients

  • 2 cups Old-fashioned rolled oats
  • 1 cup Chopped nuts (almonds, walnuts, or pecans)
  • 1 cup Dried fruit (such as raisins, cranberries, or apricots)
  • 0.33 cup Honey
  • 0.25 cup Brown sugar
  • 3 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

Step 2

Spread the rolled oats and chopped nuts onto a baking sheet. Toast them in the preheated oven for 8–10 minutes, stirring occasionally, until lightly golden and fragrant. Remove from the oven and let them cool slightly.

Step 3

In a small saucepan over medium heat, combine the honey, brown sugar, and unsalted butter. Stir until the sugar is dissolved and the mixture begins to bubble. Remove from heat and stir in the vanilla extract and salt.

In a large mixing bowl, combine the toasted oats and nuts with the dried fruit. Pour the honey mixture over the dry ingredients and stir until everything is evenly coated.

If desired, gently fold in the mini chocolate chips once the mixture has cooled slightly to prevent melting.

Transfer the mixture into the prepared baking pan. Using the back of a spatula or your hands (lightly greased to prevent sticking), press the mixture firmly into an even layer.
