Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 20 ounces crushed canned pineapple (with juice)
  • 1 teaspoon vanilla extract
  • 1 cup light brown sugar
  • 0.5 cup chopped pecans
  • 0.5 cup unsalted butter
  • 0.5 cup whole milk
  • 1 cup powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large mixing bowl, combine the flour, granulated sugar, baking soda, and salt. Stir well to evenly distribute the dry ingredients.

Step 3

Add the crushed pineapple (with its juice) and vanilla extract to the dry mixture. Mix thoroughly until everything is fully combined and forms a batter.

Step 4

Pour the batter into the prepared baking dish and spread it out evenly.

Step 5

Sprinkle the brown sugar and chopped pecans evenly over the top of the batter.

Step 6

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out mostly clean (a few moist crumbs are okay).

Step 7

While the cake is baking, combine the butter, milk, and powdered sugar in a small saucepan over medium heat. Stir constantly until the butter is melted and the mixture is smooth. Remove from heat.

Step 8

Once the cake comes out of the oven, immediately pour the warm glaze evenly over the top of the hot cake.

Step 9

Allow the cake to cool to room temperature before slicing and serving. Enjoy!
